For lunch today, I had food that is not usually prepared back home in Lima. Both the appetizer and the entrée I had today were typical dishes from the highlands of Peru. I ordered patasca and pachamanca. Patasca is made differently here. It is served as an appetizer or as part of an entrée, not as a soup. Patasca has corn and lamb tripe or pork feet. It is seasoned with chillies and cilantro. Pachamanca has potatoes, sweet potatoes, corn, lima beans, and different meats. Good restaurants serve it with humitas, which can be prepared salty or sweet. They are like tamales. I had no humitas for lunch, though. Pachamanca gets its flavor from a local herb, huacataywhich is called Peruvian black mint in English. Lunch was good today!
